Step 1: Grate the cheese
Grate 2 cups of cheddar cheese using a fine grater and set it aside.
Step 2: Make the roux
Melt 2 tablespoons of unsalted butter in a medium-sized saucepan over medium heat. Once the butter is melted, add 2 tablespoons of all-purpose flour and whisk until smooth. Cook the mixture for about 2 minutes, whisking constantly, until it turns light brown.
